Ingredients

• 1 large cucumber (sliced thin or into half moons)

• 1–2 ripe tomatoes (chopped or sliced)

• 1/4 small red onion (thinly sliced)

• Fresh parsley or basil (chopped, optional)

•    2 tbsp olive oil

    •    1 tbsp vinegar or lime juice

    •    1/2 tsp sugar or honey (optional)

    •    Salt & black pepper to taste

    •    A pinch of garlic powder or 1 clove minced garlic

    •    Optional: A sprinkle of red pepper flakes for heat

Instructions

    1.    In a bowl, combine cucumber, tomato, and onion.

    2.    In a small jar or bowl, whisk together olive oil, vinegar or lime juice, sugar (if using), garlic, salt, and pepper.

    3.    Pour dressing over the veggies and toss gently to coat.

    4.    Let sit for 10–15 minutes to chill and marinate.

    5.    Garnish with fresh herbs before serving.

Instructions

1. Make the Meatballs

    •    In a mixing bowl, combine ground turkey, egg, breadcrumbs, garlic, chopped onion and bell pepper, thyme, jerk seasoning, salt, and pepper.

    •    Mix until just combined, then roll into 1.5-inch meatballs.

Cook one of two ways:

    •    Pan-sear: Heat a bit of oil in a skillet over medium heat. Cook meatballs for 6–8 minutes, turning to brown all sides.

OR

    •    Bake: Place meatballs on a parchment-lined baking sheet and bake at 400°F for 18–20 minutes, flipping halfway through.

2. Make the Glaze

E    •    In a small saucepan, combine honey, soy sauce, lime juice (or vinegar), jerk seasoning, and BBQ sauce (if using).

    •    Simmer over low heat for 2–3 minutes until slightly thickened. Add water if needed to loosen the sauce.

3. Glaze the Meatballs

    •    Toss the cooked meatballs in the warm glaze.

    •    Let them simmer together in the pan for 2–3 minutes so they soak up all that flavor.
